Japanese sushi chefs to open school in London


Sushi in London and other parts of the UK is becoming an increasingly common sight. Indeed, many people also use sushi delivery services to make the most of the cuisine. The fresh and exotic nature of such food has proved a winning formula among Britons.

However, a number of chefs from Japan, where the culinary creations come from, are concerned that the quality of sushi in London and elsewhere is not of the necessary standard. For this reason, they have come over to the English capital to open a school to help train those involved in running restaurants, sushi delivery services and other food retailers.

One of those involved is Hiroyuki Kanda, the Daily Telegraph reports. Speaking to the publication, he stated: "When I walk into a sushi restaurant in London, it always smells fishy. A sushi restaurant serving clean fresh fish should never smell like that."

In his own restaurant in Tokyo, the expert holds three Michelin stars and he has written a national textbook on the subject.

Along with a number of other leading Japanese sushi specialists, he is opening Europe's first sushi academy. The institution will specialise in training chefs to produce the very best quality versions of the cuisine.

Mr Kanda stated: "The Italians would never allow their pizzas not to be perfectly crusty outside Italy. The French are also protective of their cuisine. We want to do the same with Japanese food. There is no quality control at the moment."

Professional Japanese cooks will give guest lectures to those studying at the academy and students will be offered the chance to train further in Japan. Also, a restaurant on site will serve the sushi being promoted by the leaders of the project.

The curriculum will place considerable emphasis on the use of the fresh and high quality seasonal ingredients.
